Recipe 🍳
- Trim the thick outer fat from the brisket chunk with a knife.
- Season the meat evenly on all sides with salt and black pepper.
- Place the brisket on an oven tray, pour beer to cover the bottom, and slow-cook in a preheated oven at 130°C (266°F) for 4 hours.
- After 4 hours, take out the meat, replenish the beer, flip it, and bake at 250°C (482°F) for 20 minutes to crisp the exterior.
- Line the bottom of a pot with aluminum foil, heat green tea bags to generate smoke, then turn off the heat, place the meat in the pot, cover, and let it rest while absorbing the smoky flavor.
- While the meat rests, mix shredded cabbage and onion with mayonnaise, vinegar, sugar, and seasoned salt to make a fresh coleslaw.
- Place coleslaw generously on hot dog buns, layer thinly sliced brisket barbecue, and drizzle with steak sauce to complete the sandwich.
- Season brisket with salt and pepper, pour beer into the oven tray, and slow-cook at 130°C for 4 hours.
- Replenish beer, flip the brisket, bake at 250°C for 20 minutes, then smoke-rest it in a pot with burned green tea bags.
- Assemble hot dog buns with cabbage coleslaw, sliced meat, and steak sauce.
Cooking tips 💡
- The key to tender brisket is slow, gentle cooking at low temperature for a long time.
- Even without professional smoking equipment, burning green tea or oolong tea bags on foil inside a pot can impart a convincing barbecue flavor at home.
- For added richness and balance, add creamy avocado slices or spicy pickled jalapeños to the sandwich.
