Seonkyoung Longest's nakji-bokkeum

A spicy nakji-bokkeum made by rubbing Korean small octopus (nakji) with salt to clean it, marinating it in a gochujang seasoning, quickly stir-frying it over high heat with vegetables, and serving it over blanched soybean sprouts.

Cooking tips

  • Korean small octopus (nakji) becomes tough if stir-fried too long, so cook it briefly over high heat and add the scallions at the end before removing from the heat.
  • Scrape all the seasoning remaining in the seasoning bowl into the wok when stir-frying for a rich, well-blended flavor.
  • Blanch the soybean sprouts in advance, toss them with sesame oil, and lay them as a bed to pair nicely with the spicy seasoning.
