Ttukdak Hyung's Spicy Stir-fried Octopus

A spicy stir-fried octopus dish with cabbage and chili peppers, coated in a fiery gochujang sauce, perfect as a main course.

Ingredients needed 🛒2 servings

  • Octopus 800g (approx. 4-5 pieces)

  • Octopus: 800g
  • Soy sauce: 5 spoons
  • Gochugaru: 7 spoons
  • Oligosaccharide syrup: 4 spoons
  • Sugar: 1 large spoon
  • Oyster sauce: 3 spoons
  • Black pepper: 1/2 spoon
  • MSG: 1/2 spoon
  • Minced garlic: 4 large spoons
  • Potato starch: 2 spoons
  • Cheongyang chili peppers: 3
  • (Based on 400g octopus)
  • Green onion: 1 stalk
  • Cabbage: 1/8 head
  • Onion: 1/2
  • Cooking oil: 2 spoons
  • Sesame oil: 1/2 spoon
  • Sesame seeds: a little
  • Somen noodles: to taste
  • Bean sprouts: to taste

Recipe 🍳

  1. Cut the side of the octopus head with scissors, then turn it inside out to remove the innards.
  2. Turn the tentacles inside out and remove the mouth from the inside.
  3. To remove any grit or impurities from the octopus suckers, add 2 tablespoons of flour, rub vigorously as if sucking, then rinse thoroughly with clean water several times.
  4. Cut into bite-sized pieces and prepare. Tip: If you buy pre-cut octopus, you can skip the above steps. * The amounts for green onion, cabbage, and onion are based on 400g of octopus, which is half the total amount to be stir-fried. If stir-frying 800g of octopus at once, too much water will be released from the octopus and vegetables, so only stir-fry 400g at a time.

  6. Cut 1 green onion stalk in half and mince it.
  7. Cut about 1/8 head of cabbage into bite-sized pieces.
