Recipe

Add water and a generous amount of salt to a pot and bring to a boil.
Add fresh limes to the boiling salt water and blanch for about 90 seconds.
Immediately remove the blanched limes and submerge in cold water to cool completely, then thoroughly remove moisture with paper towels.
Place the limes in an oven preheated to 90°C and dry for about 3–4 hours for the first drying. (Insert a paper towel between the oven door to allow moisture to escape.)
Remove the first-dried limes and dry them naturally under direct sunlight for 3–5 days until the surface becomes black and hard.
Grate the peel of the finished black lime with a grater or grind the whole lime in a blender to make a powder for storage.

Blanch limes in salt water for 90 seconds, cool in cold water, and wipe off moisture.
Dry in a 90°C oven for 3–4 hours for the first drying, then dry naturally in sunlight for 3–5 days.
Once dried black and hard, grate or blend into a powder to use as a spice.

Cooking tips

When oven-drying, inserting a paper towel in the oven door allows internal moisture to escape effectively, aiding drying.
The peel must become hard after thorough sun-drying for long-term storage and easy grinding in a grinder.
Sprinkling it on strongly flavored seafood dishes like sea urchin roe or abalone innards cleanly removes any fishy taste.
