Cooking tips

  • Dusting the inside of the shiitake mushrooms with starch first helps prevent the shrimp filling from falling off during frying.
  • Let the toasted rice cool completely before grinding to prevent it from clumping in the blender.
  • Apply the batter only to the shrimp-filled side, not the entire mushroom cap, to preserve the mushroom's flavor and shape.
  • If black vinegar is unavailable, you can substitute white vinegar as shown in the video, but add it at the end to retain its acidity.
