Recipe

Pour 1L of water into a steamer, place a perforated tray on top, and steam 600g of peeled fresh garlic.
Maintain high heat once steam begins rising, and steam for exactly 10 minutes.
Transfer the steamed garlic to a sieve, spread it out evenly, and let it cool completely at room temperature for 20 minutes.
To ensure even drying, separate large garlic cloves from small ones.
Place large cloves on the lower tray and small cloves on the upper tray of the food dehydrator, then dry at 70 degrees Celsius for 8 hours.
After drying, remove from the dehydrator and let sit at room temperature for an additional 5 hours to fully eliminate moisture.
Transfer the chewy garlic to a sterilized glass jar, filling it completely.
Use a wooden spoon to pour raw honey generously over the garlic until it is fully submerged.

Steam garlic in a steamer with rising steam for 10 minutes over high heat, then cool at room temperature.
Dehydrate at 70 degrees Celsius for 8 hours, then dry further at room temperature for 5 hours to achieve a chewy texture.
Fill a sterilized glass jar with dried garlic and pour raw honey to fully submerge it.
