Ingredients needed 🛒2 servings
- bread 4 slices
- eggs 7
- mirin 1 teaspoon
- milk 5 teaspoons
- butter 1 tablespoon
- bacon 3 strips
- canned corn 2 tablespoons
- chopped pickles 1 tablespoon
- salt a pinch
- sugar a pinch
Recipe 🍳
- Separate the yolks from 4 eggs and mix with 1 teaspoon of mirin and 3 teaspoons of milk to create the yolk sauce base.
- Place the bowl containing the sauce over boiling water and gently stir with a chopstick until thickened.
- Once the sauce has thickened, remove from heat and add 1 tablespoon of butter, stirring to melt using residual heat; then let cool.
- Cook the bacon in a pan until crispy, drain off excess fat, and finely chop.
- Whisk the remaining 3 eggs with a pinch of salt, a pinch of sugar, and 2 teaspoons of milk, then cook on a pan to make soft scrambled eggs.
- Mix the cooled yolk sauce with the scrambled eggs, chopped bacon, corn, and chopped pickles until well combined to form the sandwich filling.
- Spread the finished egg mixture generously between two slices of bread and cut into serving-sized pieces.
- Mix egg yolks with mirin and milk, then gently steam into a thick sauce and stir in butter.
- Crisp the bacon, chop it, and prepare soft scrambled eggs with 3 eggs, salt, sugar, and milk.
- Combine all prepared ingredients and fill generously between slices of bread.
Cooking tips 💡
- When steaming the yolk sauce, ensure water doesn't splash into the bowl; use low heat and stir gently to prevent lumps.
- Cook bacon until it reaches a crisp, snack-like texture to maintain a satisfying crunch and avoid sogginess inside the sandwich.
- You can also use leftover spam or scraps of vegetables from your fridge, finely chopped, to enhance flavor and reduce waste.
