Cooking tips

  • If you remove all the outer membrane from the beef shank, the meat will crumble when sliced after cooking. Leave some membrane to help hold its shape.
  • Both the beef shank and the jjangsul must be thoroughly chilled in the refrigerator before slicing, or they won’t hold a clean, thin cut.
  • The soy–pork skin gelatin (jjangsul) is key to balancing the overall seasoning and flavor, especially when eaten together with the unseasoned garnish vegetables and meat.
