  • When sautéing the meat, be patient and cook until all the released moisture evaporates and a brown fond lightly sticks to the bottom of the pot; this maximizes the overall savory depth of the sauce.
  • Since the pasta will cook further in the oven with the cheese and sauce, boil it to a firmer state (70% of the recommended time) to maintain a chewy texture without becoming mushy.
  • If traditional ziti pasta is hard to find in Korean supermarkets or online, use rigatoni with its large holes; the sauce fills the inside well, giving a much richer flavor.
