  • fresh kimchi 1 cup
  • onion 1/2
  • bell pepper and paprika each 1/4
  • mozzarella pizza cheese 150g
  • ketchup 3 tablespoons
  • sugar 2 tablespoons
  • soy sauce 2 tablespoons
  • water 1.5 cups
  • cornstarch slurry a little
  • vegetable oil 1 tablespoon

Recipe 🍳

  1. Cut onion, bell pepper, and paprika into large square pieces, similar to pizza toppings.
  2. Rinse the outer layer of the kimchi lightly under running water to reduce strong seasoning, then chop into bite-sized pieces.
  3. Reheat the soggy sweet and sour pork in an air fryer or pan to remove moisture and restore crispiness.
  4. Heat vegetable oil in a pan, then add the rinsed and chopped kimchi. Stir-fry until the spiciness and sourness mellow out.
  5. Once the kimchi is partially cooked, add the sliced onion and bell pepper, and stir-fry briefly to retain some crunch.
  6. Add water, then ketchup 3 tablespoons, sugar 2 tablespoons, and soy sauce 2 tablespoons to create a tangy-sweet base sauce. (If you have leftover sweet and sour pork sauce, you can substitute it.)
  7. When the sauce begins to boil vigorously, gradually add cornstarch slurry to thicken it to the consistency of sweet and sour pork sauce.
  8. Add the reheated crispy sweet and sour pork to the sauce pan and toss gently so the ingredients are lightly coated.
  9. Transfer the finished dish to a serving plate and generously sprinkle mozzarella pizza cheese on top. Melt the cheese using a microwave or oven until fully melted.
