- rice wine 1 tablespoon

- oyster sauce 1 tablespoon

- Soaked shiitake mushrooms should be squeezed dry and thinly julienned. Remove seeds from green and red bell peppers, then cut into uniform strips.
- Cut pork loin against the grain into thin strips, then mix with 1 teaspoon of potato starch, gently rubbing to coat the surface.
- Heat chili oil in a pan, add the starch-coated pork, and start cooking over low heat, stirring gently to prevent sticking.
- Once the pork turns white and cooked through, add 1 tablespoon of rice wine and 1 tablespoon of soy sauce to enhance aroma and umami.
- Add the julienned shiitake mushrooms, green bell pepper, and red bell pepper, then increase heat to maximum.
