🙋 Recommended for

  • Those who want to make impressive Chinese dishes at home without fail
  • People seeking a clean, satisfying side dish with crisp vegetables and tender meat
  • Individuals needing a spicy, savory stir-fry to serve with flower bread or jeon

Ingredients needed 🛒2 servings

  • pork (loin) 150g
  • green bell pepper 2 pieces
  • red bell pepper 1 piece
  • shiitake mushroom 3 pieces
  • chili oil 2 tablespoons
  • potato starch 1 teaspoon
  • rice wine 1 tablespoon
  • soy sauce 1 tablespoon
  • oyster sauce 1 tablespoon

Recipe 🍳

  1. Soaked shiitake mushrooms should be squeezed dry and thinly julienned. Remove seeds from green and red bell peppers, then cut into uniform strips.
  2. Cut pork loin against the grain into thin strips, then mix with 1 teaspoon of potato starch, gently rubbing to coat the surface.
  3. Heat chili oil in a pan, add the starch-coated pork, and start cooking over low heat, stirring gently to prevent sticking.
  4. Once the pork turns white and cooked through, add 1 tablespoon of rice wine and 1 tablespoon of soy sauce to enhance aroma and umami.
  5. Add the julienned shiitake mushrooms, green bell pepper, and red bell pepper, then increase heat to maximum.
  6. Add 1 tablespoon of oyster sauce and stir rapidly for under 1 minute until flavors are evenly distributed, then remove from heat.
  7. Immediately transfer to a serving plate to prevent moisture buildup and preserve the crisp texture.
  1. Julienne bell peppers and shiitake mushrooms, and slice pork, then coat with starch.
  2. Heat chili oil in a pan, stir-fry pork first, then add rice wine and soy sauce for flavor.
  3. Add bell peppers, mushrooms, and oyster sauce, and stir-fry over high heat for 1 minute to finish.

Cooking tips 💡

  • Coating pork with starch prevents juice loss, keeping it tender and preventing toughness.
  • Squeeze out as much moisture as possible from shiitake mushrooms to avoid dulling the crispness of bell peppers during stir-frying.
  • After adding bell peppers, cook them as quickly as possible over high heat to minimize moisture and preserve texture.
  • For children, substitute chili oil with regular cooking oil to enjoy the dish without spiciness.
