Ttukdak Hyung's Sugure Gukbap

  • Sugure: 500g
  • Water: 1.5L
  • Beef chuck: 500g
  • Cooking oil: 50ml
  • Gochugaru: 6 tablespoons
  • Beef bone broth: 500ml
  • Doenjang: 3 tablespoons
  • Anchovy sauce: 3 tablespoons
  • Soup soy sauce: 3 tablespoons
  • Mirin: 3 tablespoons
  • Ugeoji: 600g
  • Bean sprouts: 300g
  • Beef Dashida: 2 tablespoons
  • Minced garlic: 2 tablespoons
  • Green onions: 200g
  • Cheongyang chili peppers: 30g
  • Chives: 10g
  • Black pepper

Recipe 🍳

  1. Boil 500g of sugure in boiling water for about 30 minutes. 500g sugure.
  2. Boil 500g of beef chuck in 1.5L of water. 500g beef chuck.
  3. In a pan, combine and stir-fry the following ingredients: 50ml cooking oil, 6 tablespoons gochugaru, sugure, beef chuck.
  4. Add the following ingredients to the stir-fried meat and simmer for 20 minutes: 1.5L beef broth from boiling, 500ml beef bone broth, 3 tablespoons doenjang, 3 tablespoons anchovy sauce, 3 tablespoons soup soy sauce, 3 tablespoons mirin, 600g ugeoji.
  5. After 20 minutes, add the following ingredients and simmer once more: 300g bean sprouts, 2 tablespoons Beef Dashida, 2 tablespoons minced garlic, 200g green onions, 30g Cheongyang chili peppers.
  6. Transfer to a ttukbaegi (earthenware pot) and top with the following ingredients to complete! 10g chives, black pepper.
