- Oyster oil, generous (including oyster solids)
- Pasta water, a little
- White wine, a little
- Oyster sauce, a little
- Salt, to taste
- Pepper, to taste
Recipe 🍳
- In boiling water, add salt and cook the penne pasta to your desired doneness.
- Put the cooked penne in a pan, add a generous amount of pasta water and the prepared oyster oil.
- Add a small amount of white wine and oyster sauce, then stir-fry over high heat until the sauce coats the pasta.
- When the liquid has mostly evaporated, adjust seasoning with salt and pepper, then plate.
- Boil the penne pasta until done.
- In a pan, combine the pasta, pasta water, oyster oil, white wine, and oyster sauce; cook and stir.
- Season with salt and pepper to finish.
