Ttukdak Hyung's All-Purpose Soy Sauce Quail Egg Jangjorim

A deeply flavorful soy-braised dish made by simmering quail eggs, shishito peppers, and pork tenderloin together with an all-purpose soy sauce seasoning.

Ingredients needed 🛒3 servings

  • 1 pack of boiled quail eggs
  • 200g pork tenderloin
  • 1 handful of shishito peppers
  • Soy sauce
  • Rice syrup
  • Mirin
  • Sugar
  • Oyster sauce
  • Minced garlic
  • Some pepper
  • 1 tbsp sesame oil
  • Some sesame seeds

Recipe 🍳

  1. Prepare the all-purpose soy sauce seasoning by mixing minced green onion, soy sauce, rice syrup, mirin, sugar, oyster sauce, minced garlic, and pepper.
  2. Add an appropriate amount of water to a pot, then add the boiled quail eggs, shishito peppers, and chunks of pork tenderloin.
  3. Pour in the prepared soy sauce seasoning and simmer until the ingredients are deeply colored and the meat is fully cooked through.
  4. Once the meat is tender and cooked, remove it from the pot and let it cool slightly, then shred it along the grain using your hands or chopsticks.
  5. Return the shredded meat to the pot, mix with the sauce, then drizzle with sesame oil and sprinkle sesame seeds, tossing to coat evenly.
  1. Combine basic soy sauce seasoning ingredients to make the seasoning sauce.
  2. Put water, quail eggs, shishito peppers, pork tenderloin, and seasoning sauce in a pot and boil until reduced.
  3. Remove the cooked meat, shred it along the grain, return to the pot, and finish with sesame oil and sesame seeds.

Cooking tips 💡

  • Pork tenderloin shreds easily when cooked for a long time, so make sure it's fully cooked before shredding along the grain to allow the seasoning to penetrate between the fibers.
  • Poke small holes in the shishito peppers with a toothpick before cooking so the savory seasoning seeps inside and keeps them moist.
