Ttukdak Hyung's Mapo Egg Jorim

A spicy braised dish of mapo tofu-style eggs, seasoned with chili paste and doubanjiang, featuring a kick from Cheongyang peppers.

Ingredients needed 🛒4 servings

  • Water: 2L
  • Salt: 1 Tbsp
  • Eggs: Half a tray
  • Cooking oil: 4 Tbsp
  • Minced ginger: 0.5 Tbsp
  • Chili powder: 5 Tbsp
  • Beef: 300g
  • Onion: 100g
  • Green onion: 100g
  • Water: 360ml
  • Soy sauce: 4 Tbsp
  • Mirin: 4 Tbsp
  • Corn syrup: 4 Tbsp
  • Doubanjiang: 1 Tbsp
  • Chicken stock: 1 Tbsp
  • Oyster sauce: 2 Tbsp
  • Minced garlic: 1 Tbsp
  • Pepper: 0.5 Tbsp
  • Cheongyang chili pepper: 15g
  • Red chili pepper: 15g
  • Sesame seeds
  • Water: 50ml
  • Potato starch: 1 Tbsp

Recipe 🍳

  1. Boil the eggs. Add water and salt to a pot. Add the eggs and boil for 7 minutes. Remove the boiled eggs and put them in ice water. Peel all the eggs.
  2. Add the Cheongyang chili peppers to the pan.
  3. Add the red chili peppers to the pan.
  4. Pour in the starch slurry.
  5. Stir to combine well.
  6. Add the boiled eggs to the pan.
  7. Simmer for 1 minute.
  8. Garnish with sesame seeds.
  9. Complete the Mapo Egg Jorim. Add cooking oil to the pan. Add minced ginger to the pan. Add chili powder to the pan. Add minced beef to the pan. Add minced green onion to the pan. Add minced onion to the pan. Stir-fry. Add water to the pan as is. Add soy sauce to the pan. Add mirin to the pan. Add corn syrup to the pan. Add doubanjiang to the pan. Add chicken stock to the pan. Add oyster sauce to the pan. Add minced garlic to the pan. Add pepper to the pan.

  2. Add seasonings, mix or stir-fry, and adjust taste.
  3. Serve in a dish while maintaining texture.
