In a bowl, mix water and potato starch to make a very thick, sticky batter that drips slowly rather than flows.
Pat the cocktail shrimp dry, then pour the prepared batter over them, coating each shrimp generously.
Pour enough oil into a pan and preheat to 180°C (350°F). Add the battered shrimp and fry for exactly 5 minutes until crispy.
In a separate bowl, mix mayonnaise, sugar, and lemon juice to taste to create a sweet and tangy cream sauce.
Add the freshly fried shrimp to the sauce and gently toss to coat without breaking the crust.

Mix water and potato starch to make a very thick batter.
Coat shrimp in batter and deep-fry at 180°C (350°F) for 5 minutes until crispy.
Toss fried shrimp in a sauce made of mayonnaise, sugar, and lemon juice.

Cooking tips

If the batter is too thin, the coating will easily fall off, so add water little by little to achieve a very thick consistency.
Frying the shrimp too long will make the meat tough and shrink them, so keep the cooking time within 5 minutes.
For extra flavor, grate a little lemon zest into the sauce to elevate the aroma.
