Recipe

Trim the shrimp by cutting off the whiskers, then press firmly on the head to extract the innards and collect them in a separate bowl.
Thinly slice the onion.
In a bowl, combine 200ml heavy cream, 200ml milk, the reserved shrimp head innards (the fat and juices from the head, not the roe), and 0.5 tsp seasoned salt. Mix well.
Heat 1 tbsp butter and 1 tbsp cooking oil in a pan over medium heat. Sauté the sliced onion until translucent.
Add the prepared shrimp and lightly sear for about 1 minute, just until the surface color changes slightly.
Pour in the shrimp head innard cream base and add a pinch of crushed pepper to taste.
Simmer over low heat, stirring, until the sauce thickens and the shrimp are well coated. Serve.
