- 1 cleaned flatfish
- vegetable oil as needed
- seasoned salt as needed
- pepper as needed
- green onion as needed
- 1 cheongyang chili pepper
- gochugaru as needed
- mirin as needed
- sugar as needed
- 1 tbsp minced garlic
- gochujang as needed
- doenjang as needed
- sesame seeds as needed
Recipe 🍳
- Coat a sheet of parchment paper with vegetable oil, place the cleaned flatfish on top, and make diagonal cuts on the skin.
- Season both sides of the flatfish with vegetable oil, seasoned salt, and pepper.
- Place the flatfish in an air fryer preheated to 190°C and cook for 15 minutes until golden brown.
- While the fish is cooking, prepare the sauce by mixing minced green onion, cheongyang chili pepper, gochugaru, mirin, sugar, minced garlic, gochujang, and doenjang in a bowl.
- After 15 minutes, carefully flip the flatfish, spread the sauce evenly on top, sprinkle with sesame seeds, and cook for an additional 5 minutes at 190°C.
- Score the flatfish, season with oil, salt, and pepper, then air fry at 190°C for 15 minutes as a first bake.
- Make a spicy sauce with green onion, chili pepper, gochugaru, mirin, sugar, garlic, gochujang, and doenjang.
- Flip the flatfish, spread the sauce and sesame seeds on top, then air fry at 190°C for an additional 5 minutes.

- If you're intimidated by cleaning fish, you can buy frozen pre-cleaned flatfish from the market with the innards and head already removed for convenience.
- If you prefer the natural flavor of the fish without a spicy sauce, you can skip the saucing step and enjoy it as plain grilled fish.
