- 1 flatfish
- 1 potato
- 1 handful green peas (beans)
- 4 cloves garlic
- olive oil as needed
- salt to taste
- pepper to taste
- 2 tbsp white wine vinegar
- 1 tbsp butter
- 1/2 lemon
- parsley as needed
Recipe 🍳
- In boiling water with salt, blanch the thinly sliced potato and green peas separately for about 1 minute 30 seconds to 2 minutes, then drain.
- Coarsely chop the garlic so that small pieces remain.
- Heat olive oil in a pan, add the blanched potato, season with salt and pepper, and cook until golden brown.
- When one side of the potato is cooked, flip, add the chopped garlic and white wine vinegar, reduce slightly, then add the blanched green peas, butter, and lemon juice to finish the sauce.
- Heat a generous amount of olive oil in a hot pan, place the cleaned flatfish skin-side down, season with salt and pepper, and cook until crispy.
- Flip the flatfish, cook the other side, add butter for extra flavor, then turn off the heat.
- Plate the completed potato garlic sauce, top with the grilled flatfish, and sprinkle with parsley to serve.
- Blanch the potato and green peas briefly in boiling water.
- Pan-fry the potato, then add minced garlic, vinegar, butter, and lemon juice to make the potato sauce.
- In a separate pan, pan-sear the flatfish on both sides until crispy.
- Serve the flatfish over the potato sauce on a plate.
Cooking tips 💡
- When blanching the potato, do not cook it too soft, as it will break apart easily when pan-fried. Remove it while the center is still slightly firm.
- When adding vinegar to the pan, the strong acidic fumes may cause coughing, so it is advisable to open a window while cooking.
