- Shrimp: 500g
- Olive oil: 400ml
- Pepperoncino: 2g
- Salt: 0.2 spoonfuls
- Katsuobushi: 1g
- Garlic: 80g
- Cherry tomatoes: 150g
- Shiitake mushrooms: 30g
- Baguette
- Parsley
Recipe 🍳
- Remove the heads from the shrimp and peel them. 500g shrimp.
- Add the following ingredients to a pan and simmer for 20 minutes. 400ml olive oil, shrimp heads and shells, 2g pepperoncino, 0.2 spoonfuls salt.
- After 20 minutes, turn off the heat, add 1g katsuobushi, then put the solids in a blender and grind. 1g katsuobushi.
- Strain the ground shrimp shells into the pan where the shrimp were simmering, add the following ingredients, and simmer over low heat for 15 minutes. 80g garlic, 150g cherry tomatoes, 30g minced shiitake mushrooms, 500g shrimp.
- Plate with the following ingredients for finished Gambas! Baguette, parsley.
- Add the following ingredients to a pan and make mantecare. Shrimp, oil, pasta water, boiled pasta.
- Taste and adjust seasoning with salt and pepper, then mix. Salt, pepper.
- Plate the Gambas with pasta on top to enjoy it as a pasta dish!
- Boil shrimp heads and shells in olive oil to extract flavor, then blend with bonito flakes.
- In the same pan used for boiling shrimp, add the blended shrimp shells, garlic, cherry tomatoes, shiitake mushrooms, and shrimp, and simmer over low heat.
- Serve with baguette, or add pasta noodles to enjoy as gambas pasta.
