Ttukdak Hyung's Beef Kimchi Rice Pot
A hearty one-bowl meal of beef, aged kimchi, and rice, stir-fried or topped with a spicy chili paste seasoning.

Ingredients needed 🛒2 servings
- Beef (brisket): 500g
- Shiitake mushrooms: 100g
- Aged kimchi: 300g
- Rice: 400g
- Water: 450ml
- Perilla leaves: 150g
- Ground perilla seeds: 2 tablespoons
- Seasoning
- Chives: 50g
- Cheongyang chili peppers: 30g
- Soy sauce: 50ml
- Gochugaru (chili powder): 2 tablespoons
- Plum extract: 2 tablespoons
- Minced garlic: 1 tablespoon
- Vinegar: 1 tablespoon
- Perilla oil: 2 tablespoons
Recipe 🍳
- Prepare the ingredients for stir-frying: beef and shiitake mushrooms, cut into bite-sized pieces. Cut 500g of beef into bite-sized pieces. Remove the stems from 100g of shiitake mushrooms. Cut them in half lengthwise, then into bite-sized pieces.
- Add the cut beef and shiitake mushrooms to the pot. Sprinkle with a little salt and stir-fry over high heat. Add the beef to the pot; I used brisket, but any cut of beef will do. Add the shiitake mushrooms and salt.
- Once the beef turns brown, transfer it to a bowl and set aside.
- Take 300g of aged kimchi and rinse it under clean water. Finely chop the rinsed aged kimchi.
- Add the finely chopped aged kimchi to the pot and stir-fry with sugar. Add the aged kimchi to the pot. Add 0.5-1 tablespoon of sugar. Stir-fry until the moisture is gone.
- Add the ingredients to the stir-fried aged kimchi and cook. Place 400g of rice and 450ml of water over the stir-fried aged kimchi. Add 2 tablespoons of ground perilla seeds. Add the perilla leaves.
- Cover with a lid and simmer over low heat for 20 minutes.
- Meanwhile, finely chop the green onions.
- After 20 minutes, open the lid and add the prepared ingredients. Add the chopped green onions. Place the reserved beef on top. Sprinkle with sesame seeds. Cover with a lid and let it sit for 10 minutes. Seasoning recipe.
- Finely chop 50g of chives and add them.
- Prepare ingredients to be served with rice.
- Cook or mix main ingredients with seasoning.
- Top with garnishes and complete the dish.
