Cooking tips

  • When blanching, keep the lid open so the characteristic odor of the backbone evaporates.
  • Boiling the meat alone for 20 minutes before adding seasonings is the secret to tender, non-tough meat.
  • The longer you simmer gamjatang, the softer and more delicious it becomes. If you have time, simmer for about 30 more minutes over low heat!
