eggs 3
egg yolk 1
glutinous rice flour 1 cup
perilla leaves 15 leaves
green onion slices 120g
green onion salad seasoning (salt 1/2 tsp, sugar 1 tbsp, vinegar 2 tbsp)
spicy soy sauce dressing (white part of scallion 5cm, green chili pepper 1/2, red chili pepper 1/2, soy sauce 3 tbsp, mirin 1 tbsp, vinegar 1 tbsp, sugar 1/2 tsp)
vegetable oil as needed

Recipe

Pat the beef for jeon dry with kitchen paper to thoroughly remove any blood or moisture, preventing any off-odors.
Spread the beef out flat and lightly season with a pinch of seasoning salt and black pepper. Let it marinate for 10 minutes.
In a bowl, add 3 eggs and 1 egg yolk. Gently mix them without creating foam, making sure to completely break the egg strands.
Wash the perilla leaves thoroughly, trim the stems, and cut each leaf in half to match the size of the beef pieces.
Soak the green onion slices in cold water for 5 minutes to reduce spiciness, then squeeze out all moisture. Mix with salt, sugar, and vinegar to make the green onion salad.
In a bowl, combine minced white scallion, minced green chili pepper, and minced red chili pepper. Add soy sauce, mirin, vinegar, and sugar to create the spicy soy sauce dressing.
Lightly coat the marinated beef with glutinous rice flour on both sides, tap off excess to prevent clumping, then fully coat with the egg mixture.
Heat vegetable oil generously in a pan over medium-low heat. Place the egg-coated beef onto the pan first.
Fully coat the halved perilla leaves with egg mixture, then place them neatly on top of the beef in the pan. Cook until golden brown on both sides.

Remove blood from the beef and marinate it; prepare the egg mixture with perilla leaves and egg yolk.
Make the tangy green onion salad and spicy chili-soy dipping sauce separately for serving.
Coat the beef with glutinous rice flour and egg mixture, place in the pan, then top with egg-coated perilla leaves and cook until golden brown.
