Striker Chef's Garlic Bomb Stir-fried Pork

- pork (as needed)
- generous amount of minced garlic (enough to cover the meat)
- 2 slices ginger
- 1 apple
- king oyster mushrooms (as needed)
- 10 scallions
- 1 cheongyang chili pepper
- 5 tbsp gochugaru
- 3 tbsp soy sauce
- a pinch of sugar
- 2 tbsp gochujang
- 5 tbsp mirin
- a pinch of black pepper
- 10 tbsp water
- a splash of cooking oil
- a splash of sesame oil
- a pinch of sesame seeds
Recipe 🍳
- Mix 5 tbsp gochugaru, 3 tbsp soy sauce, a pinch of sugar, 2 tbsp gochujang, 5 tbsp mirin, and a pinch of black pepper. Add 10 tbsp water and stir to create a slightly runny sauce.
- Cut the apple into large wedges with the skin on. Cut the mushrooms into bite-sized pieces. Separate the white and green parts of the scallions and slice them.
- Heat a pan with cooking oil and pan-grill the apple wedges until golden on both sides. Add the mushrooms and stir-fry until half-cooked. Add the white parts of the scallions, stir-fry briefly, then set aside.
- In the same pan, add the pork, a massive amount of minced garlic, and sliced ginger. Stir-fry until the pork is cooked, then cut it into bite-sized pieces.
- When the garlic is fragrant and the pork is fully cooked, pour in the prepared sauce and simmer until slightly reduced. Add back all the reserved vegetables and toss well.
- Turn off the heat. Garnish with the remaining green parts of the scallions, sliced cheongyang chili pepper, sesame seeds, and a drizzle of sesame oil.
- Mix the measured ingredients and adjust consistency with water to make the seasoning sauce.
- Pan-grill the apple, mushrooms, and white parts of scallions, then set aside.
- In the same pan, stir-fry the pork with a massive amount of minced garlic and ginger.
- When the pork is cooked, add the seasoning sauce and the griddled vegetables, then simmer and toss.
- Turn off the heat and top with scallions, cheongyang chili, sesame seeds, and sesame oil.

- Do not cook the garlic completely; pour in the sauce and simmer lightly so that the raw garlic's characteristic pungent flavor and aroma come through, making it more delicious.
- The apple is essential to balance the strong garlic character, so be sure to include it.
