Striker Chef's Garlic Bomb Stir-fried Pork

An unusual pork dish that maximizes the pungent and spicy flavors by stir-frying an enormous amount of minced garlic and ginger with sweet apple.

Ingredients needed 🛒2 servings

  • pork (as needed)
  • generous amount of minced garlic (enough to cover the meat)
  • 2 slices ginger
  • 1 apple
  • king oyster mushrooms (as needed)
  • 10 scallions
  • 1 cheongyang chili pepper
  • 5 tbsp gochugaru
  • 3 tbsp soy sauce
  • a pinch of sugar
  • 2 tbsp gochujang
  • 5 tbsp mirin
  • a pinch of black pepper
  • 10 tbsp water
  • a splash of cooking oil
  • a splash of sesame oil
  • a pinch of sesame seeds

Recipe 🍳

  1. Mix 5 tbsp gochugaru, 3 tbsp soy sauce, a pinch of sugar, 2 tbsp gochujang, 5 tbsp mirin, and a pinch of black pepper. Add 10 tbsp water and stir to create a slightly runny sauce.
  2. Cut the apple into large wedges with the skin on. Cut the mushrooms into bite-sized pieces. Separate the white and green parts of the scallions and slice them.
  3. Heat a pan with cooking oil and pan-grill the apple wedges until golden on both sides. Add the mushrooms and stir-fry until half-cooked. Add the white parts of the scallions, stir-fry briefly, then set aside.
  4. In the same pan, add the pork, a massive amount of minced garlic, and sliced ginger. Stir-fry until the pork is cooked, then cut it into bite-sized pieces.
  5. When the garlic is fragrant and the pork is fully cooked, pour in the prepared sauce and simmer until slightly reduced. Add back all the reserved vegetables and toss well.
  6. Turn off the heat. Garnish with the remaining green parts of the scallions, sliced cheongyang chili pepper, sesame seeds, and a drizzle of sesame oil.
  1. Mix the measured ingredients and adjust consistency with water to make the seasoning sauce.
  2. Pan-grill the apple, mushrooms, and white parts of scallions, then set aside.
  3. In the same pan, stir-fry the pork with a massive amount of minced garlic and ginger.
  4. When the pork is cooked, add the seasoning sauce and the griddled vegetables, then simmer and toss.
  5. Turn off the heat and top with scallions, cheongyang chili, sesame seeds, and sesame oil.

Cooking tips 💡

  • Do not cook the garlic completely; pour in the sauce and simmer lightly so that the raw garlic's characteristic pungent flavor and aroma come through, making it more delicious.
  • The apple is essential to balance the strong garlic character, so be sure to include it.
