Striker Chef's Cider Braised Eggs

A secret recipe for braised eggs where the carbonation in cider, through osmosis, allows the seasoning to deeply penetrate the eggs in a short time.

  • 30 hard-boiled eggs
  • 800ml water
  • 500ml cider
  • 1 dashi pack
  • 1 and 1/3 cups soy sauce
  • 1/2 cup corn syrup
  • 20 garlic scapes
  • 30 whole garlic cloves
  • 5 Cheongyang peppers
  • 30 Korean chili peppers
  • 2 tbsp brown sugar

Recipe 🍳

  1. In a pot, combine 30 hard-boiled eggs, 800ml water, 500ml cider, and 1 dashi pack. Bring to a boil over high heat.
  2. Once the liquid boils, add 1 and 1/3 cups soy sauce and 1/2 cup corn syrup in order. Simmer over medium heat for about 15 minutes.
  3. While the eggs are simmering, cut the garlic scapes into finger-joint lengths, prepare whole garlic cloves, and roughly chop the chili peppers so they absorb the seasoning well.
  4. After simmering for 15 minutes, remove the dashi pack, from which the broth flavors have sufficiently infused, using a spoon or tongs.
  5. Add the 30 prepared whole garlic cloves first and boil for about 5 more minutes over medium heat to infuse the braising liquid with a deep garlic aroma.
  6. Next, add all the prepared garlic scapes, Korean chili peppers, and Cheongyang peppers. Boil for another 5 minutes to maintain the crisp texture and color of the vegetables.
  7. Just before turning off the heat, taste the liquid and add 2 tbsp brown sugar if needed to adjust the sweetness to your preference. Let it cool slightly to finish.

  2. Remove the dashi pack, add whole garlic cloves, and boil for 5 minutes to add a deep flavor.
  3. Add garlic scapes and chili peppers, boil for another 5 minutes, then adjust sweetness with sugar to complete.

  • The carbonation in cider promotes osmosis, helping the seasoning to evenly penetrate the eggs in a short time.
  • Monosaccharides like sugar can harden egg proteins if added from the beginning, hindering seasoning absorption. Therefore, always add sugar at the very last stage of cooking, tasting and adjusting as needed.
  • Green vegetables can turn brown and become mushy if boiled for too long. It's best to add them after the garlic and cook only briefly.
