After cooking milk bossam, strain the remaining broth through a fine sieve naturally to obtain only the clear liquid. Be careful not to press the vegetables, as it will make the broth cloudy.
Place the strained broth in a pot and let it sit briefly so the oil rises to the surface. Skim off the oil cleanly with a ladle or spoon to keep it light.
Warm the de-oiled bossam broth over heat. It is already perfectly seasoned, so no additional seasoning is needed.
Boil the udon noodles in boiling water until plump and chewy, then lightly rinse in cold water to remove starch and drain thoroughly.
Neatly arrange the cooked udon noodles in a bowl.
