  • Using thinner skewers than regular wooden chopsticks makes it easier to thread the fish cakes and is safer to eat.
  • Using a small pot is important because it makes the broth rise and coat the noodles and skewers evenly. If using a wide pan, you'll need to continuously ladle the broth over them.
  • If you prefer chewy fish cakes, add them later after the noodles have partially cooked rather than from the start, adjusting the timing accordingly.
