  • Those who prefer a tender, juicy texture where juice and meat fat are fully absorbed into the dish

Ingredients needed 🛒2 servings

  • scallions 1 bunch
  • pork belly slices 300g
  • minced kimchi 2 full small bowls
  • sugar 1/2 tablespoon
  • soy sauce 2 tablespoons
  • minced garlic 1/2 tablespoon
  • chicken stock 1/3 tablespoon
  • onion 1/2 medium
  • red pepper powder 1 tablespoon
  • water 1/2 small bowl
  • sesame seeds a pinch

Recipe 🍳

  1. Chop scallions thickly and spread them generously across the pan bottom.
  2. Place pork belly slices 300g and minced kimchi (2 full small bowls) on top of the scallions.
  3. Add sugar 1/2 tablespoon, soy sauce 2 tablespoons, minced garlic 1/2 tablespoon, and chicken stock 1/3 tablespoon in sequence.
  4. Coarsely chop half an onion and place it on top of the meat, then evenly sprinkle red pepper powder 1 tablespoon.
  5. Pour water 1/2 small bowl around the edges, then cover the pan with a lid.
  6. Cook uncovered for about 10 minutes over low heat, allowing the ingredients to steam thoroughly.
  7. After 10 minutes, remove the lid and turn up the heat to high, stirring and mixing everything well to evaporate excess moisture.
  8. Turn off the heat when the broth has reduced to the right consistency, then sprinkle sesame seeds and finish.

Cooking tips 💡

  • By heating the ingredients over low heat without pre-sautéing, you avoid burning while allowing natural juices and meat fats to blend, creating deep flavor.
  • A small amount of chicken stock is the key secret for rich umami taste.
  • Mix the finished kimchi stir-fry with rice, sesame powder, and a soft-boiled egg on top for a delicious and satisfying rice bowl.
