Recipe 🍳
- Place thick-cut pork shoulder meat, 500g, at the bottom of a deep pan or pot.
- Layer the prepared napa cabbage kimchi, 1/4 head, generously on top of the meat.
- Add 500ml of water until the meat is submerged by about two-thirds.
- Pour in store-bought chicken stew seasoning sauce to taste.
- Once the water begins to bubble vigorously, cover the pot tightly and simmer over medium-low heat for 15 minutes to fully soften the meat and kimchi.
- After 15 minutes, remove the lid and cut the pork and kimchi into bite-sized pieces using scissors.
- Simmer the broth over medium heat until it reaches your desired thick, chunky consistency.
- Add finely chopped green onion, 1 stalk, and green chili pepper, 2 pieces, and stir briefly to combine and lightly cook through.
- When the broth has reduced to the right thickness, sprinkle with sesame seeds and finish.
- Place pork shoulder meat at the bottom of a pot, then add kimchi, 500ml water, and chicken stew sauce. Bring to a boil.
- Once boiling, cover and simmer over medium-low heat for 15 minutes.
- Uncover, chop ingredients, add green onion and green chili pepper, then reduce the broth until thickened, finishing with a sprinkle of sesame seeds.
Cooking tips 💡
- Use pork shoulder or belly with a good balance of fat and lean meat—this ensures tenderness even after long simmering.
- Adding plenty of green onion enhances the dish’s refreshing crispness and subtle sweetness, helping to counterbalance the richness of the kimchi.
