Seungwoo Dad's Smoked Duck and Mushroom Roast

A super simple three-harmony dish where smoked duck is slowly rendered over low heat, king oyster mushrooms are roasted in the duck fat, and everything is wrapped in ssam mu (pickled radish wraps).

Ingredients needed 🛒2 servings

  • smoked duck 1 pack (about 400g)
  • king oyster mushrooms 2
  • ssam mu 1 pack

Recipe 🍳

  1. Slice the king oyster mushrooms lengthwise into bite-sized pieces.
  2. Place the smoked duck in an unheated pan and start cooking over low heat.
  3. Cook slowly over gentle heat until white fat begins to melt from the duck.
  4. Once a pool of oil has rendered, add the sliced mushrooms and roast them, coating them generously with the duck fat.
  5. Cook until the mushrooms have fully absorbed the duck fat and are golden brown and chewy.
  6. Serve the finished duck and mushrooms alongside refreshing ssam mu for a three-harmony bite.

  2. Slowly cook smoked duck over low heat to render plenty of oil.
  3. Roast mushrooms in the rendered duck oil and serve with ssam mu.

Cooking tips 💡

  • Since smoked duck is already seasoned with salt, it's recommended not to add extra salt when roasting the mushrooms.
  • High heat can char the duck before the oil renders out, so be sure to keep the heat low or very low.
