Seungwoo Dad's Smoked Duck Ssamjang Stir-fried Udon

- Handful of leftover smoked duck meat
- 1 serving of udon noodles
- 1 green onion
- 1 tbsp ssamjang
- 1/2 cup water
- A drizzle of sesame oil
Recipe 🍳
- Cut the green onion lengthwise in half and slice; separate the white part for fragrance and the green part for garnish.
- Place leftover smoked duck in a pan and cook on both sides to render the duck oil.
- Once the duck oil is rendered, add the white part of the green onion first and sauté until fragrant, creating aromatic green onion duck oil.
- Add 1/2 cup water and the udon noodles directly to the pan, cover with a lid, and wait about 1 minute to steam the noodles.
- When the noodles are soft and loosened, remove the lid, add 1 tbsp ssamjang and the reserved green part of the green onion, and stir-fry well so the sauce coats the noodles.
- Just before turning off the heat, lightly drizzle a round of sesame oil to blend the flavors smoothly, then finish.
- Stir-fry smoked duck and white part of green onion to make green onion duck oil.
- Add water and udon noodles, cover, and cook for 1 minute, then loosen the noodles.
- Add ssamjang and green part of green onion, stir-fry, and finish with sesame oil.
Cooking tips 💡
- If you forcibly separate refrigerated udon noodles, they may break. It's better to add water, cover the pan, and let the steam moisten them, then naturally loosen them.
- The final drizzle of sesame oil is essential as it balances the salty and tangy finish of store-bought ssamjang with its nutty flavor.
