1. Wash the bean sprouts thoroughly under running water, then drain them completely in a colander until ready to cook.
2. Place the smoked duck in a cold, dry frying pan without overlapping.
3. Turn the heat to low and cook the duck slowly, allowing the white duck oil to render out abundantly.
4. Once the duck is golden brown and enough oil has accumulated, turn the heat up to high.
5. Add the drained bean sprouts to the pan all at once and quickly toss them to coat evenly with the rendered duck oil.
6. When the bean sprouts begin to wilt slightly, add a tiny pinch of seasoned salt to enhance the flavor.
7. Stir-fry for a short time to maintain the bean sprouts' crisp texture, then immediately turn off the heat and serve.
