- Spaghetti noodles 90g
- Shrimp 5 pieces
- Garlic 4 cloves
- Olive oil generously
- Parmigiano Reggiano cheese to taste
- Pecorino Romano cheese to taste
- Black pepper a pinch
- Orange 1 piece
Recipe 🍳
- Remove the shrimp heads and peel off the shells, then remove the intestinal tract on the back side and prepare the shrimp.
- Place generous olive oil in a pan, add the shrimp heads and shells, and simmer over low heat for about 15 minutes while gently crushing the internal organs to extract the oil.
- After removing the shrimp heads and shells, add more olive oil to the infused oil, then add sliced garlic and sauté over low heat to release its aroma.
- Boil the spaghetti noodles in salted water for about 9 minutes.
- Once the garlic aroma rises, add the cooked noodles, shrimp meat, and pasta water, then shake the pan to create a smooth emulsion (mantecato).
- When the shrimp meat is cooked through, grate in the cheeses and sprinkle with black pepper, mixing lightly.
- Transfer the pasta to a plate, grate fresh orange zest over it, and serve evenly.
- Separate shrimp heads, shells, and meat; remove the intestinal tract.
- Simmer shrimp heads and shells in olive oil over low heat to make shrimp-infused oil.
- Sauté garlic in the oil, then add noodles, shrimp meat, and pasta water to form an emulsion.
- Mix in cheese and pepper, then finish by sprinkling orange zest.
