Okjubu's Microwave Soy Sauce Jjimdak

Ingredients needed 🛒2 servings
- chicken thighs 600g
- potato 1
- carrot 1/2
- onion 1/2
- green onion 1 stalk
- soaked glass noodles 1 handful
- soy sauce 2 tbsp
- minced garlic 1.5 tbsp
- oyster sauce 3 tbsp
- sugar 2 tbsp
- jjajang powder 3 tbsp
- water 1 cup
- pepper a pinch
Recipe 🍳
- Cut the chicken thighs into bite-sized pieces.
- Mix soy sauce (2 tbsp), plenty of minced garlic, oyster sauce (3 tbsp), sugar (2 tbsp), plenty of jjajang powder, and water (1 cup) to make the seasoning sauce.
- Line the bottom of a microwave-safe bowl with thinly sliced potato, place the chicken on top, and sprinkle with pepper.
- Top with sliced onion, carrot, and green onion, then pour the seasoning sauce over everything.
- Cover with lid and microwave for 15 minutes.
- Take out, gently mix, add the soaked glass noodles, cover again, and microwave for another 5 minutes.
- Prepare chicken and mix sauce with soy sauce, garlic, oyster sauce, sugar, jjajang powder, and water.
- Layer potato, chicken, and vegetables in a bowl, add pepper and sauce.
- Cover and microwave for 15 minutes.
- Add soaked glass noodles and microwave for another 5 minutes.
Cooking tips 💡
- If you don't have store-bought jjajang powder, you can use the seasoning packet from jjajang ramyeon as a substitute.
- To prevent the potato from being undercooked, slice it thinly or pre-microwave it briefly before layering.
- This leaves almost no dishes to wash, making it perfect for a lazy Sunday or late-night meal.
