- chicken (thigh meat) 500g
- cabbage as needed
- green onion 1 stalk
- sweet potato 1 piece
- perilla leaf 10 leaves
- red pepper powder 3 tablespoons
- sugar 1 tablespoon
- soy sauce 3 tablespoons
- mirin 3 tablespoons
- minced garlic 1 tablespoon
- oligodextrose 2 tablespoons
- gochujang 2 tablespoons
- ginger juice a little
- black pepper a little
- vegetable oil as needed
Recipe 🍳
- Rinse the chicken under running water, pat dry, then cut into bite-sized pieces.
- In a bowl, mix red pepper powder 3 tablespoons, sugar 1 tablespoon, soy sauce 3 tablespoons, mirin 3 tablespoons, minced garlic 1 tablespoon, oligodextrose 2 tablespoons, gochujang 2 tablespoons, ginger juice, and black pepper to make a spicy-sweet marinade.
- Coat the prepared chicken with the marinade, toss well, and let it marinate for about 30 minutes. (If short on time, you can proceed directly to cooking.)
- Cut cabbage, green onion, sweet potato, and other accompanying vegetables into bite-sized pieces.
- Heat vegetable oil in a pan over medium heat, add the marinated chicken and all the prepared vegetables at once, and stir-fry together.
- Stir-fry until the sweet potato and chicken are fully cooked through without burning, then finish by adding the perilla leaves to enhance the aroma.
- Cut chicken into bite-sized pieces and prepare the vegetables.
- Mix red pepper powder, gochujang, soy sauce, sugar, and other seasonings to create a golden ratio marinade.
- Toss the chicken with the marinade and let it rest for 30 minutes.
- Heat oil in a pan, stir-fry the chicken and vegetables together, then top with perilla leaves to finish.
