Oh Se-deuk's Tomato Worcestershire Sauce Steak

A chef's technique for fail-proof steak in a thin home pan and a homemade cherry tomato sauce recipe.

Ingredients needed 🛒1 servings

  • 1 piece beef steak meat (about 200-300g)
  • 1/3 onion
  • 1 pack cherry tomatoes (3 times the amount of onion)
  • 2 strips bacon
  • 2.5 tbsp Worcestershire sauce
  • 1 tbsp honey or syrup
  • a little prepared mustard or horseradish
  • appropriate amount of garnish vegetables (kabocha squash, bell pepper, mushrooms, asparagus, rosemary, etc.)
  • generous amount of cooking oil
  • a little salt
  • a little pepper

Recipe 🍳

  1. Roughly chop the onion and wash the cherry tomatoes thoroughly, leaving them whole.
  2. Add cooking oil to a pan and sauté the chopped onion over high heat until slightly smoky to develop a charred flavor.
  3. When the onion turns golden, add the cherry tomatoes and sauté, then add 2.5 tbsp Worcestershire sauce and 1 tbsp honey. Reduce until the sauce becomes thick, then transfer to a bowl.
  4. Before cooking, pat the meat dry thoroughly with a paper towel to remove excess blood, and season with salt.
  5. For a thin pan, set the heat to medium to prevent burning, and add a generous amount of cooking oil to pan-fry the steak, almost like shallow-frying the surface.
  6. When one side is crispy and golden, flip the steak and add garnish vegetables like kabocha squash, asparagus, and mushrooms, along with bacon and rosemary, cooking them together.
  7. When the steak is cooked to medium doneness, turn off the heat and let it rest briefly in the pan or on a cutting board to allow the juices and fat to redistribute evenly.
  8. Place the steak on a plate and finish with the prepared tomato Worcestershire sauce and a bit of prepared mustard alongside.
  1. Sauté chopped onion and cherry tomatoes over high heat, then add Worcestershire sauce and honey, reducing to make the sauce.
  2. After patting dry the beef, cook it in plenty of oil over medium heat to sear the surface like shallow-frying, and cook the vegetables and bacon together.
  3. Let the cooked steak rest briefly, then plate with the tomato sauce and prepared mustard.

Cooking tips 💡

  • When using a thin home frying pan over high heat, the exterior burns while the inside remains raw, so cook over medium heat with a generous amount of oil.
  • Well-marbled meat should be cooked to at least medium doneness so the fat melts sufficiently, allowing you to fully enjoy its rich flavor.
  • The resting process after turning off the heat allows the internal heat to distribute evenly, making the meat much more tender.
