Ingredients needed 🛒2 servings
- pasta for 2 servings
- potato, cut into large chunks
- whole garlic cloves, generously
- butter, generously
- milk, as needed
- heavy cream, as needed
- pork belly, a little
- shrimp, a little
- green onion, a little
- salt 5g
- cooking oil, a little
- black pepper, a little
Recipe 🍳
- Cut the potato into large chunks and peel the garlic cloves, keeping them whole.
- In a heated pan, add a generous amount of butter and sauté the prepared potato and whole garlic until golden brown.
- Once the garlic and potato are fully cooked, pour in the milk and heavy cream, add salt, and bring the sauce base to a simmer.
- Bring a pot of salted water to a boil and cook the pasta for half the recommended time on the package (about 5-6 minutes). Drain and set aside.
- Transfer the simmered potato and garlic cream mixture to a blender and blend until smooth and thick, with no lumps.
- In a new pan, drizzle a little cooking oil and stir-fry the pork belly until golden and crispy, releasing its fat.
- Once the pork belly is cooked, add shrimp, chopped green onion, and black pepper. Stir-fry over high heat until fragrant.
- To the stir-fried ingredients, add the blended potato cream sauce and the half-cooked pasta. Stir well and simmer until the sauce thickens and clings to the noodles, then serve.
- In a pan with butter, sauté large-cut potato and whole garlic until golden, then add milk, heavy cream, and salt and simmer.
- Blend the simmered sauce ingredients until smooth, and cook pasta for only half the recommended time.
- Stir-fry pork belly, shrimp, and green onion, then add the prepared sauce and pasta. Simmer together until the sauce thickens.
Cooking tips 💡
- Sautéing the whole garlic thoroughly in butter removes its harsh raw flavor and allows its savory sweetness to meld smoothly into the cream sauce.
- Partially cooking the pasta and finishing it in the sauce allows the noodles to absorb rich flavor, making it much more delicious.
- If the cream sauce becomes too thick, adjust the consistency by adding small amounts of pasta water until desired creaminess is reached.
