- marinade minced onion 560g
- marinade minced pear 120g
- marinade minced garlic 24g
- marinade minced ginger 10g
- marinade premium soy sauce 500g
- marinade sugar 280g
- marinade mirin 10g
- marinade sesame oil 10g
- marinade corn syrup 30g
- marinade rice wine 100g
- marinade MSG 3g
- marinade fine red pepper powder 200g
- marinade black pepper a pinch
Recipe 🍳
- Remove the head and fins from the cod, then rinse thoroughly under running water to eliminate any fishy odor.
- Starting from the tail end, use a knife to carefully remove the central bone and small side bones.
- Evenly coat only the flesh side (belly side) of the cleaned cod with glutinous rice flour.
- Mix all marinade ingredients together, then let the mixture rest for 5 to 10 minutes to allow the red pepper powder to bloom.
- Heat vegetable oil generously in a pan, place the cod with the belly side down, and grill as if frying.
- Transfer the golden-brown grilled cod to a serving plate, then generously spoon the aged marinade over it.
- Garnish with finely chopped green onion and toasted sesame seeds to finish.
- Clean the cod by removing head, fins, and bones.
- Evenly coat the belly side of the cod with glutinous rice flour.
- Mix all marinade ingredients to make a homemade marinade and let it age.
- Grill the cod on the belly side first in a pan with generous oil until golden brown.
- Apply the marinade to the grilled cod and sprinkle with green onion and toasted sesame seeds to serve.
