Ingredients needed 🛒2 servings
- 5 eggs
- 0.5 green onion
- 1 tbsp minced garlic
- some carrot
- plenty of cooking oil
- 200ml water
- 5 heaping tbsp ketchup
- 1 tbsp oyster sauce
- 2 tbsp sugar
- some starch water
- some mayonnaise
Recipe 🍳
- Finely chop the green onion and carrot, and mince the garlic.
- Heat plenty of oil in a pan, then add the eggs one by one, frying them until the edges are crispy and golden brown on both sides, like deep-frying. Set aside on a plate.
- Leave about 2 tbsp of oil in the pan, then sauté the chopped green onion, minced garlic, and carrot until fragrant.
- Once the vegetables are sautéed, add 5 heaping tbsp of ketchup and stir-fry briefly, then pour in 200ml of water and mix well.
- Add 1 tbsp of oyster sauce and 2 tbsp of sugar to complete the sweet and spicy sauce.
- When the sauce comes to a boil, add all the fried eggs and simmer until the sauce is absorbed and slightly thickened.
- Once the sauce has reduced, adjust the consistency with a little starch water if needed, then turn off the heat.
- Transfer to a plate, drizzle a little mayonnaise over the fried eggs, and serve.
- Finely chop vegetables and fry eggs crispy in plenty of oil.
- Adjust oil in pan, sauté green onion, garlic, and carrot for fragrance.
- Add ketchup, water, oyster sauce, and sugar to make the sauce and bring to a boil.
- Add the fried eggs to the sauce and simmer until the sauce thickens.
- Plate and zigzag mayonnaise on top to finish.
Cooking tips 💡
- When frying the eggs, use plenty of oil and fry the edges over high heat like deep-frying so that the eggs remain chewy after simmering in the sauce.
- For adults, adding some Cheongyang chili pepper, chili oil, or a splash of vinegar to the sauce gives a more spicy and sour taste suitable for a drinking snack.
