Kim Jin-soon's Jeju-Style Braised Hairtail

Jeju-style braised hairtail made by simmering radish and hairtail in rice starch water made from boiling raw rice, with doenjang adding a savory depth.

Ingredients needed 2 servings

Recipe

Cooking tips

  • Cook the radish first before adding the hairtail so that it finishes tender together with the fish.
  • After making starch water with raw rice, strain out all the rice grains to keep the braising liquid clean.
  • Mix doenjang with water beforehand so it dissolves well; you can also add it when making the seasoning sauce.
  • Do not add so much additional water that all the vegetables are submerged. The broth should just reach the hairtail for a glossy, reduced braise.

Recommended for

  • Those looking for a savory braised hairtail with added doenjang.
  • Those who want to make a 2-serving fish side dish.
