Layer the wild peaches in a sterilized container, covering each layer with sugar, repeating this process to eliminate air pockets.
Fill the container completely with wild peaches and sugar in a 1:1 equal weight ratio, then cover the top layer generously with sugar to prevent the fruit from being exposed.
Store the container in a shaded, well-ventilated indoor spot with the lid slightly ajar to allow airflow.
After one week, when the sugar begins to dissolve, cover the lid with plastic wrap and seal it tightly. Invert the container periodically to ensure even mixing of the sugar.
After three months, the fruit will become shriveled and dry—remove the seeds and use the flesh as a pickle. The syrup should be aged for at least seven months before diluting with water and enjoying as a beverage.
