Striker Chef's Nectarine Pork Jowl Sandwich

- 1 ciabatta
- 2 slices unsalted butter
- 200g pork jowl
- Pinch of salt
- 1 nectarine
- 1/2 green onion
- 1/2 onion
- 1/2 bell pepper
- Just enough heavy cream (about 100ml)
- Appropriate amount of ramen spice packet
- Generous amount of black pepper
- Appropriate amount of avocado spread
- Pinch of fresh herbs (basil or chives)
Recipe 🍳
- Slice the top of the ciabatta bread. Melt unsalted butter in a pan, toast both sides until golden brown, and let it cool on a wire rack to remove moisture.
- Lightly score the pork jowl, season with salt on both sides, and sear in a dry pan, starting with the fatty side, to render its own fat. Grill until cooked and let it rest.
- Slice the nectarine around the pit into a rugby ball shape. Sear briefly in the remaining pork fat from cooking the jowl over high heat until golden brown on the outside. Set aside.
- In the same pan, add chopped green onion, chopped onion, and chopped bell pepper. Sauté over low heat until softened.
- Add heavy cream to cover the vegetables, bring to a simmer, and gradually add the ramen spice packet, adjusting to your taste, and reduce.
- Once the sauce is thick, add 1 slice of unsalted butter for flavor, and mix in the green parts of the chopped green onion to finish the sauce.
- Spread avocado spread on the inside of the toasted ciabatta. Layer with thinly sliced pork jowl, grilled nectarines, and the special cream sauce. Garnish with herbs and black pepper to complete.
- Toast the ciabatta in butter and let it cool on a wire rack.
- Crisp the pork jowl, let it rest, then slice thinly.
- Lightly grill the nectarine slices in pork fat until golden brown on the outside.
- Sauté vegetables, then add heavy cream and ramen spice packet and reduce to make the sauce.
- Fill the bread with avocado spread, pork jowl, nectarines, and sauce to complete.
