- udon noodles 2 servings
- bacon 200g
- cabbage 1 handful
- green onion 1 handful
- carrot 1/4
- onion 1/2
- oyster sauce 10g
- soy sauce 1 tablespoon
- mirin 1 tablespoon
- sugar 1 tablespoon
- black pepper about 2 pinches
- noodle water a little
Recipe 🍳
- Mix oyster sauce, soy sauce, mirin, and sugar in the specified amounts to prepare the seasoning sauce in advance.
- Boil the udon noodles in hot water for about 1 minute, then drain and set aside.
- Heat a frying pan with oil, then add sliced bacon, onion, and cabbage. Stir-fry until they are lightly cooked and slightly golden.
- Add the boiled udon noodles and the prepared seasoning sauce to the pan, stirring quickly so the sauce evenly coats the noodles.
- Add the chopped carrot and green onion, and continue stir-frying until all ingredients are tender. If the noodles stick to the pan due to the sauce, add a small amount of noodle cooking water.
- Finally, add about 2 pinches of black pepper and stir-fry over high heat until the sauce thickens and clings well to the noodles.
- Mix oyster sauce, soy sauce, mirin, and sugar to make the special seasoning sauce.
- Boil udon noodles for 1 minute, drain, then stir-fry bacon and vegetables in an oiled pan.
- Add udon noodles, seasoning sauce, carrot, green onion, and black pepper in order, and stir-fry over high heat until the sauce reduces and coats the noodles.
Cooking tips 💡
- Since the udon noodles will be stir-fried again in the pan, boil them in boiling water for only about 1 minute to maintain their chewy texture.
- If the noodles become dry or stick to the pan during stir-frying, add 1–2 tablespoons of noodle cooking water to keep them moist and smooth.
- For a different twist, substitute bacon with pork belly or fresh seafood for a uniquely delicious variation of stir-fried udon.
