Seungwoo Dad's Curry Stir-fried Udon

  • 1 piece of udon noodles
  • 1 piece of chicken thigh
  • 1/2 onion
  • 2 tablespoons curry powder
  • 1/2 teaspoon soy sauce
  • 9 tablespoons water

Recipe 🍳

  1. In a preheated pan without oil, use only the chicken thigh's own fat to pan-fry both sides until the surface is crispy.
  2. Cut the golden brown chicken thigh into bite-sized pieces, then add sliced onion to the pan together.
  3. Over high heat, stir-fry thoroughly until the seared color of the meat and the color of the onion reach a similar deep brown hue.
  4. Pour 9 tablespoons of water into the pan, add 2 tablespoons of curry powder and 1/2 teaspoon of soy sauce, and stir evenly to dissolve without lumps.
  5. When the curry sauce comes to a bubbling boil, add the udon noodles, immediately cover with a lid, and let sit for about 1 minute.
  6. Remove the lid, gently loosen the noodles while stir-frying to evenly coat with the sauce, and adjust the amount of liquid to achieve the desired consistency.
  1. Pan-fry chicken thigh on both sides until golden, cut into pieces, then add sliced onion and stir-fry until browned.
  2. Add water, curry powder, and soy sauce, dissolve without lumps to make the sauce, then add udon noodles, cover, and cook.
  3. Remove the lid, gently loosen the noodles, and stir until evenly coated with the sauce, reducing to finish.

Cooking tips 💡

  • If you add too much soy sauce to the curry powder base, it can easily become salty, so measure exactly 1/2 teaspoon to enhance the aroma.
  • For a dry, chewy stir-fried noodle texture, reduce the sauce thoroughly; for a moister style, add a little water during stir-frying to achieve your preferred consistency.
