- Pat dry fresh ribeye steak with kitchen paper to remove excess moisture, then finely chop it using a knife to achieve a satisfying chewy texture.
- Chop onion and pickles to a similar size as the beef pieces for consistent texture.
- In a bowl, combine the minced beef, onion, and pickles. Add ketchup 1 tablespoon, sugar 1 tablespoon, vinegar 0.5 tablespoon, and a pinch of red pepper powder.
- Add half of the bibimbap liquid sauce (0.5 portion), salt 2 pinches, Tabasco sauce 3 drops, and vegetable oil 1 tablespoon. Mix thoroughly to form the beef tartare.
- Boil the bibimbap noodles in water, then immediately rinse under cold water until cool. Drain completely to remove all moisture.
- Place the boiled noodles into a bowl with the remaining half of the bibimbap liquid sauce and toss evenly.
- Arrange the spicy noodles on one side of a plate, and place a round-shaped beef tartare beside it to complete the dish.
