• Lightly sautéing the ramen broth over low heat removes the strong artificial aroma and raw scent typical of instant noodles, resulting in much deeper flavor.
• Since this is a dry-style ramen that isn’t rinsed in cold water, cook the noodles slightly longer than usual when making regular soup ramen to prevent them from becoming too firm.
• If fish cake is unavailable, you can substitute with spam or ham cut into strips. For shiitake mushrooms, you can also use enoki or shiitake mushrooms available at home.
• When making green onion oil, use medium-low heat instead of high heat to allow the green onion’s fragrance to fully infuse into the oil, achieving a gentle, golden-brown color.
