Firmly stuff the belly cavity of the whole fish with the large green onion and sliced lemon.
Sprinkle a generous amount of coarse salt over the outside of the fish so the salt penetrates well.
Wrap the fish tightly in 3–4 layers of water-moistened paper (or cooking kraft paper).
Place the fish on heated charcoal or a grill grate and cook for about 15 minutes, turning it over occasionally.
When you peel away the paper layers, the skin and scales will come off together, revealing moist, tender flesh.

Stuff the fish belly with large green onion and lemon, then sprinkle the outside generously with coarse salt.
