- a handful of fresh basil
- 2 cloves garlic
- 5 macadamia nuts (or almonds)
- 2 tbsp grated Parmesan cheese
- 4 slices baguette bread
- 3 tbsp extra virgin olive oil
Recipe 🍳
- Coarsely tear the fresh basil by pressing down with a knife, then place it in a mixing bowl.
- Crush 1 clove of garlic and the macadamia nuts with the flat side of a knife or a hard tool into a coarse powder, then add to the basil.
- Add the grated Parmesan cheese and olive oil to the bowl and mix evenly to make an instant pesto-like seasoning.
- Dice the tomatoes into small cubes, add them to the seasoning bowl, and toss gently.
- Immediately after toasting the baguette slices in a pan or oven until golden, rub the cut side of the remaining garlic clove over the bread surface to impart a hint of garlic aroma.
- Top the toasted baguette with a generous heap of the tomato-basil mixture, making sure it doesn't spill over.
- Mix basil, crushed garlic, macadamia nuts, grated cheese, and olive oil to make the seasoning.
- Add small-diced tomatoes to the seasoning bowl and toss together.
- Rub garlic on the toasted baguette, then top with the tomato mixture to finish.
