Ingredients needed 🛒4 servings
- Milk 200ml
- Vanilla bean 1/2
- Lemon zest from 1/4 lemon
- Sugar 60g
- Corn starch 15g
- Egg yolks 3
- Mascarpone cheese 250g
- Heavy cream 150ml
- Gelatin powder 3g
- Coffee extract 150ml
- Almond liqueur 1 tablespoon
- Ladyfinger cookies 12
- Cocoa powder as needed
Recipe 🍳
- In a saucepan, combine milk, vanilla bean seeds and pod, and lemon zest (yellow part only). Bring to a gentle simmer until bubbles form to infuse the flavors.
- In a bowl, mix sugar and corn starch, then add egg yolks and stir until smooth without lumps to form a thin cream.
- Gradually pour the warm infused milk into the yolk mixture while stirring quickly. Return to the saucepan and cook over medium heat, stirring constantly, until thickened into a custard cream.
- Place the custard cream over an ice bath to cool quickly.
- In a bowl, soften the mascarpone cheese. Add a little heavy cream, the cooled custard cream, and dissolved gelatin powder. Mix until smooth and lump-free to make the cheese cream.
- Mix the coffee extract with sugar and almond liqueur to create a syrup.
- Dip the non-sugared side of the ladyfinger cookies briefly into the coffee syrup, then remove. Place them in a container with the sugared side facing down.
- Spread a generous layer of cheese cream over the cookies and level it. Repeat with another layer of cookies and cream.
- Refrigerate for at least 3 hours to set. Just before serving, dust generously with 100% unsweetened cocoa powder.
- Infuse milk with vanilla and lemon, then mix with egg yolks, starch, and sugar to make custard cream.
- Blend the cooled custard with mascarpone cheese, heavy cream, and gelatin to make the cheese cream.
- Alternate layers of ladyfinger cookies dipped in coffee syrup and cheese cream, then chill and dust with cocoa powder.

- When dipping ladyfingers in coffee, soak the non-sugared side first. This allows the cookie to absorb just the right amount without losing its shape.
- Adding a little gelatin powder helps the cream hold its shape longer for a beautiful presentation.
