Fabri's Salmon Steak and Asparagus Salad

- 2 salmon steak pieces
- 4-5 asparagus spears
- 3 strawberries
- 1/2 hallabong
- 1 radish
- 3 tbsp plain yogurt
- 1 tbsp honey
- 1 tsp mustard
- a pinch of salt
- a pinch of pepper
- olive oil as needed
Recipe 🍳
- Sprinkle salt evenly over the salmon surface and let it cure for 10 minutes.
- Pat the cured salmon dry with paper towels to remove excess moisture.
- Using a vegetable peeler, slice the asparagus from the bottom into thin, long strips and soak them in cold water to enhance crispness.
- Peel the hallabong, removing both the outer and inner white skin, and separate the segments. Thinly slice the strawberries and radish.
- Mix together plain yogurt, honey, mustard, and a pinch of salt to make a creamy, tangy yogurt sauce.
- Preheat a pan, add olive oil, and sear the salmon until golden and crispy on both sides.
- Drain the asparagus and toss it lightly with the strawberries, hallabong, and radish. Arrange on a plate and top with the seared salmon steak.
- Drizzle the prepared yogurt sauce attractively over the salmon and salad to finish.
- Cure the salmon in salt for 10 minutes, pat dry, and sear in a pan until golden.
- Shave the asparagus thinly with a peeler and soak in cold water; prepare the fruit and vegetables.
- Mix yogurt, honey, and mustard for the sauce, and serve alongside the salmon and salad.
